Vegetable Stock Recipe

Following a simple vegetable stock recipe can help you maintain healthy eating.

The dish prepared out of the cooking direction is always very rich and nutritious.

There’s no big deal in getting the required ingredients.The cooking direction is also very easy to follow.

However, you’ve got to be very patient since the total cooking time takes up to 3 hours.

The recipe is described thus:

 

Prep Time:  30 minutes

Cook Time: 3 hours


Yield: 8 servings

Ingredients:

12 cups water

2 - 3 pounds vegetable peels

6 – 8 peppercorns

1 bay leaf

1 teaspoon salt

Directions:

1.    Prepare a gallon baggie of veggie trimmings and pour it into a large stock pot or stew pot.

2.    Add peppercorns and bay leaf

3.    Add 8 cups of water and watch the water level. You can increase the water level if there’s a need for that.

4.    Add salt  but don’t stir

5.    Simmer over high heat

6.    Reduce heat to control the simmering

7.    Use a wooden spoon to push the veggies down gently. Don’t stir.

8.    You should resist the urge to stir. If you stir, the stock will become cloudy. On the other hand, it will become nice and crystal clear if you resist the urge to stir.

9.    Add extra cups of water if the liquid reduces

10. Remove from heat, strain through a colander

11.Squeeze the stock out of the veggies and then discard the veggies

12. Strain through a sieve, and then use a fine mesh to strain it again.

13. Pour the stock into plastic cups

14. Allow to cool completely at room temperature, then freeze

15. Pop each  stock cube out of its cup after they are frozen

16. Wrap each of them in a wax paper  or parchment

17. Put all the stock into a big gallon freezer bag

18. That’s it! You can be taking some portions of the frozen stock and then add a teaspoon of salt and water. You simply stir well to dissolve the salt and then enjoy the dish. The stock can stay in your fridge for up to a week.
