Healthy Vegetable Side Dish Recipe

Ingredients:

½ cup chopped onion

1 cup celery, sliced

3 tablespoons butter

2 minced garlic cloves

¼ cup water

1 cup chicken broth (low sodium)

1 cup carrots thinly cut

4 cups potatoes, peeled and cubed

1 tablespoon fresh parsley, chopped

¼ teaspoon pepper

Directions:

1.    Gently fry onion, celery and garlic in butter using a skillet. Allow them to become tender.

2.    Add water, broth, carrots, potatoes and pepper

3.    Bring to a boil; reduce heat.

4.    Cover and simmer for 20 minutes until the potatoes become tender

5.    Remove cover and simmer for extra 5 minutes until the broth becomes thick Stir occasionally.

6.    Sprinkle with parsley and start serving hot
