Ingredients:

¾ cup egg substitute

1 cup cooked brown rice

¾ cup Mozzarella cheesed, shredded and divided

¾ cup fresh mushrooms, sliced

1 tablespoon melted butter

¼ cup milk (fat-free)

1 cup fresh broccoli, chopped

Directions:

1.    Combine ¼ cup egg substitute, half of the cheese and rice in a small bowl.

2.    Get a 9 inch pie plate coated with cooking spray, then pour in the mixture on it.

3.    Use another bowl to combine mushrooms, butter, milk, broccoli and the rest of the egg substitute

4.    Start baking at 3750 for about 25 minutes or less. You have to insert a knife near the center of the dish. Keep baking until the knife comes out clean.

5.    Sprinkle the remaining cheese on the dish

6.    Bake for extra 3 minutes or less until the cheese is melted

7.    Start serving hot.
