Easy Vegetable Pie Recipe

You can eat healthy by following an easy vegetable pie recipe. The dish prepared out of it is quite rich and nutritious.

Here’s the cooking guideline:

 

Prep Time:  20 minutes

Cook Time: 35 minutes

Yield: 6 servings

Ingredients:

1/3 cup onion, chopped

2 cups broccoli chopped (or 2 cups cauliflower, sliced)

1 cup milk

1 cup shredded cheddar cheese

1/3 cup yellow bell peppers, chopped (or 1/3 cup red bell pepper)

½ cup Bisquick

2 eggs

¼ teaspoon pepper

½ teaspoon salt

Directions:

1.    Get a 9-inch pie plate and spray it with a non-stick cooking spray

2.    Heat 1 inch of salted water in a 2-quart saucepan

3.    Add broccoli

4.    Cover and bring to a boil. Cook for 5 minutes until the mixture becomes tender

5.    Drain completely

6.    Mix onion, cheese, bell pepper and broccoli in nice bowl

7.    Add other remaining ingredients

8.    Stir  until the mixture blends well

9.    Get the mixture transferred to a pie plate

10. Bake the mixture uncovered at 4000 for 35 minutes or less. Keep baking until it turns golden brown.

11. Allow to rest 5 minutes before you start cutting and serving.

 

Tips:

·       You can use either 2 cups sliced cauliflower or 2 cups chopped broccoli

·       You can also use either 1/3 cup red bell pepper or 1/3 cup yellow bell peppers.

·       The amount of all ingredients increases or decreases depending on the number of serving targeted.
