Hearty Vegetable Lasagne Recipe

Vegetable lasagne recipe is a favorite plan for many healthy eaters.

It’s indeed a better alternative to all those fast foods that encourage obesity.

Actually, “lasagne” is a plural form for “lasagna” which refers to a pasta dish that is prepared with diverse kinds of veggies and other quality ingredients.

It’s traditionally an Italian dish made of healthy ingredients. It’s often baked in the oven.

It’s also flavored with onions, oregano, garlic and other veggies.

Given below is a special recipe meant for the dish:

 

Prep Time:  1 hour


Cook Time: 40 minutes


Yield: 6 servings

Ingredients:

2 red capsicums, peeled, quartered and roasted

1 large sliced eggplant

1 diced onion

1 kg butternut pumpkin

7 lasagna sheets

2 tablespoon plain flour

2 tablespoon butter

Ricotta cheese

Dill

2 cups milk

Directions:


1.    Use a small saucepan to melt butter  over medium heat

2.    Stir in flour and cook for 1 minute to form a smooth paste

3.    Add milk and stir until the sauce heats up and thickens

4.    Add cheese with milk; then set the sauce aside.

5.    Salt eggplant for 1 hour or more and then grill it

6.    Chop pumpkin into pieces and then roast

7.    Use a saucepan to mix onion, dill and spinach and cook lightly

8.    Heat oven to 1800 and spray the tray.

9.    Lay the eggplant at the bottom, add the sauce and pasta. After that, add capsicum, pasta and sauce; then add pumpkin, pasta and sauce.

10. Add spinach mix on top and then sprinkle with parmesan

11. Bake for 40 minutes

12. Start serving hot at the end.

·       The amount of ingredients increases or decreases depending on the number of servings.
