Yummy Easy Vegetable Lasagna Recipe

Healthy eating is very possible when you follow an easy vegetable lasagna recipe.

Actually, lasagna is the favorite pasta for most veggie lovers. It’s a kind of pasta dish prepared with healthy veggies.

It can be stuffed with mushrooms, oregano, onions, pepper and other quality ingredients. The recipe is very easy and quick.

It’s also diabetic friendly. It’s highly recommended to everyone suffering from diabetes.

Here’s the cooking guideline:


Prep Time:  45 minutes

Bake Time: 20 minutes

Yield: 12 servings


1 tablespoon olive oil

1 large chopped onion

6 minced garlic cloves

3 tablespoons fresh basil, minced

1 can tomato sauce

1 can tomato puree

1 teaspoon sugar

3 tablespoons minced fresh oregano

½ teaspoon crushed red pepper flakes


For Roasted Vegetables

3 cups fresh mushrooms, sliced

4 cups zucchini, sliced

2 medium green peppers cut into pieces

¼ teaspoon pepper

½ teaspoon salt

1 medium onion, cut into pieces

1 cup shredded Parmesan cheese

4 cups shredded part-skim mozzarella cheese

6 lasagna noodles, cooked, drained and rinsed



1.    Gently fry onion in oil using a large saucepan.

2.    Add garlic and cook for extra 1 minute

3.    Stir in sauce, tomato puree and seasonings

4.    Bring to a boil, reduce heat

5.    Simmer uncovered for 25 minutes or less until the dish  becomes slightly thick

6.    Use a large bowl to combine all the veggies

7.    Add salt and pepper

8.    Transfer to baking pans coated with cooking spray

9.    Bake at 4500 for 20 minutes or less until the mixture becomes golden brown.

10. Spread ½ cup sauce into a baking dish coated with cooking spray, lay up 3 noodles with 1 cup sauce, cheeses and halt of the roasted veggies. Repeat layers.

11. Cover and bake for 10 minutes at 4000

12. Remove cover and bake for 15 minutes until the mixture becomes golden brown and bubbly.

13. Allow to stand for 10 minutes before you start serving.
