Vegetable Curry Recipe – Quick and Easy

Following a simple vegetable curry recipe can help you eat healthy regularly.

You don’t need to spend so much time in getting the dish prepared.

All you need is to gather the recommended ingredients.

The recipe is simply quick and easy. It’s also very healthy and rich.

It requires a mixture of edible veggies and other specific ingredients.

Given below is a simple cooking guideline to follow:

 

Prep Time:  20 minutes

Cook Time: 40 minutes

Yield: 4 servings

Ingredients:

1 teaspoon mustard seeds

1 medium diced onion

2 tablespoons peanut oil

1 green chili, diced

1 crushed garlic clove

1 teaspoon fresh grated ginger,

1 teaspoon ground coriander

1 teaspoon turmeric

3 – 4 curry leaves

1 tablespoon curry powder

400 g mixed veggies (snow peas, red peppers, cauliflowers, carrot, squash etc)

2 cups coconut milk

¼ cup cashews, toasted

1 cup vegetable stock or chicken stock

1 teaspoon salt

2 tablespoon cashew for garnishing

Coriander leaves for garnishing

Basil leaves for garnishing

Pappadams for serving

Steamed Jasmine Rice for serving

 

Directions:

1.    Use a large pan to heat the oil.

2.    Gently fry onion, mustard seeds, garlic and ginger for 30 seconds

3.    Reduce heat, then add ground coriander, turmeric, curry powder and leaves

4.    Fry for extra 2 minutes

5.    Add toasted cashews and other veggies, then mix everything well

6.    Add stock and coconut milk

7.    Simmer covered for 30 minutes until the veggies become tender. Add extra water if needed.

8.    Season and garnish with fresh coriander, toasted cashews and basil sprigs before serving.

9.    Start serving with steamed rice and Pappadums

·       The amount of ingredients increases or decreases depending on the number of servings.
