Fresh Vegetable Broth Recipe

Vegetable broth recipe is very simple to follow although it requires some hours to get done.

Given below is a simple cooking guideline you can follow when preparing a fresh veggie broth:


Prep Time:  45 minutes

Cook Time: 1 – 3 hours

Yield:  5 servings


2 medium onions cut into pieces

2 tablespoons olive oil

1 whole garlic bulb, peeled and separated into cloves

2 celery ribs cut into pieces

3 m3dium carrots cut into pieces

3 medium leeks cut into pieces (white and light green parts)

½ pound fresh quartered mushrooms

8 cups water

1 cup packaged fresh parsley sprigs

½ teaspoon whole peppercorns

1 teaspoon salt

1 bay leaf

4 sprigs fresh thyme


1.    In a stockpot, heat oil over medium heat until it gets hot

2.    Add onions, garlic and celery. Cook and stir for 5 minutes until tender.

3.    Add carrots, leeks and stir for 5 minutes

4.    Add water, parsley, mushrooms, salt, thyme, bay leaf and peppercorns.

5.    Bring to a boil; reduce heat, simmer uncovered for about 1 hour

6.    Remove from heat

7.    Strain through a cheesecloth lined with colander

8.    Discard the vegetables and skim fat if you’re serving immediately. If not, you can refrigerate overnight or 8 hours. You can remove fat from the surface. You can even cover broth and refrigerate for 3 days. It can also be frozen for up to 6 months.
