Spanish Vegetable Recipe - Sautéed Peppers with Garlic, Eggplant and Potatoes

Ingredients:

3 large garlic cloves, minced

4 long green mild peppers

3 eggplants (Japanese)

½ cup extra virgin olive oil

3 peeled potatoes sliced

Salt to taste

 

Tips:

·       If you can’t get the Japanese eggplant, use any of the regular types you can see around.

·       The amount of ingredient increases or decreases depending on the number of serving targeted.

 

Directions:

1.    Wash the green peppers and cut off their stems

2.    Slice the peppers and remove the veins and seeds. Slice in lengthwise and cut in half.

3.    Wash the eggplant, cut in half length-wise and then in half. You can also cut the long pieces in half cross-wise.

4.    Pour the extra virgin olive oil in a big frying pan

5.    Heat the oil on medium high

6.    Once the oil is hot, you have to combine all the ingredients in the frying pan. Stir until the potatoes become soft and brown.

7.    Add salt to taste before serving.
