Tasty Roasted Vegetable Recipe

Roasted vegetable recipe is quite easy to follow. I personally love the tasty nature of the dish when it’s thoroughly prepared.

Prep Time:  15 minutes

Cook Time: 30 minutes

Yield: 2 servings


5 big fresh and quartered mushrooms

2 red cubed potatoes medium-size

5 minced garlic cloves

1 tablespoon lemon juice

1 tablespoon olive oil

1 teaspoon crushed and dried rosemary

1 green pepper, cut into pieces

1/8 teaspoon pepper

¼ teaspoon salt



1.    Put the potatoes in a saucepan and  add water to cover

2.    Bring to a boil, reduce heat.

3.    Cover and simmer for 8 minutes until the potatoes are tender, then drain.

4.    Combine all the remaining ingredients in a large bowl

5.    Include the potatoes and toss to coat

6.    Spread  in sizeable baking pan coated with a quality cooking spray

7.    Bake at 4500 for 30 minutes until potatoes become golden brown.

8.    You may stir once and then start serving.


Tip: The amount of ingredients increases or decreases based on the number of servings you’re targeting.
