Rich Recipe Fried Fish

Prep Time:  30 minutes

Cook Time: 20 minutes

Yield: 2-4 servings

 

Ingredients:

1 ½ pounds fleshy white fish fillets, sliced into 1 ounce strips

2 cups flour

1 gallon safflower oil

1 tablespoon baking powder

1 teaspoon kosher salt

1 dash Old Bay seasoning

¼ teaspoon cayenne pepper

1 cold bottle brown beer

Cornstarch for dredging

 

Tips:

·       The fish fillets can be of any type such as tilapia, cod, pollock, salmon, tuna, and so on.

·       The amount of ingredients increases or decreases depending on the number of servings targeted.

 

Directions:

1.    Preheat oven to 2000 F

2.    Use a 5-quart Dutch oven to heat the safflower oil over high heat till it gets to 3500.

3.    Use a large bowl to mix flour, salt, cayenne pepper, Old Bay seasoning and baking power.

4.    Stir in the beer until the batter becomes smooth and devoid of lumps.

5.    Refrigerate the mixture for 60 minutes or less.

6.    Gently dredge the fish strips in cornstarch.

7.    Dip the fish into batter in small batches and immerse in the hot oil.

8.    Once the batter is set, keep turning the fish strips over until they turn golden brown.

9.    Use a roasting rack to drain the fish.

10. Allow the oil to come back to 3500 between the batches.

11. Start serving once the delicacy is ready.
