Ingredients:
4 ounce fish fillets
1/8 teaspoon ground red pepper
¼ teaspoon celery salt
3 tablespoons cornmeal
3 tablespoons seasoned bread crumbs
4 lemon wedges
½ teaspoon water
1 egg white, gently beaten
1 tablespoon peanut oil or canola oil

Directions:
1. Rinse the fish fillets and then pat them with paper towels
2. Preheat oven to 5000.
3. Mix together corn meal, bread crumbs, red pepper and celery salt. Add peanut oil or canola oil and then blend well with a fork.
4. Use a small bowl to beat egg white and water.
5. Brush one side of each fillet with the egg white.
6. Dip each fillet in the bread crumb mixture and also in the egg white mixture.
