Ingredients:

2 cans condensed and undiluted tomato sauce

2 cans diced tomatoes

1 cup water

1 medium chopped sweet red pepper

1 package pepperoni, sliced and quartered

2 minced garlic cloves

1 cup fresh mushrooms, sliced

½ teaspoon dried basil

½ teaspoon rubbed sage

½ teaspoon dried oregano

10 sliced toasted French bread

1 – 2 cups shredded cheese

Directions:

1. Combine the tomatoes, water and tomato sauce

2. Boil in Dutch oven, reduce the heat

3. Cover and simmer for about 15 minutes

4. Mash the mixture with a potato masher

5. Add red and green pepper together with pepperoni, garlic, sage, mushrooms,

6. Cover and simmer for about 10 minutes until the vegetables become tender.

7. Use a ladle and pour the soup in bowls.

8. Top each bowl with a slice of bread and then sprinkle the cheese

9. Allow to boil until the cheese melts

10. The soup is now ready for serving

Tips:

• You can add salt and dry pepper to taste

• The cheese can be of any brand. You can use Mozzarella cheese or any other brand.

• The quantity of ingredients can change depending on the number of servings
