How to Make Nutritious Oven Baked Barbecue Chicken

Total Time: 80 minutes

Prep time: 10 minutes

Cook time: 70 minutes

Yield: 4 servings

Ingredients:

3 lbs cut up chicken

½ teaspoon sea salt

½ teaspoon black pepper

¼ cup chicken stock or water

½ cup barbecue sauce (see recipe below)

Directions:

1. Season chicken with salt and pepper

2. Place in an oven proof dish

3. Add chicken stock or water

4. Bake for 35 minutes uncovered at 360° F

5. Remove from oven and generously baste with barbecue sauce

Ingredients for Barbecue Sauce:

1 cup brown sugar

5 roasted whole tomatoes

½ ounce liquid smoke

16 ounces ketchup

1 small onion chopped

1 cup apple cider vinegar

1 clove garlic

1 teaspoon salt

Directions for Barbecue Sauce:

1. Season 5 whole tomatoes with salt, pepper and olive and place in oven proof dish

2. Roast the tomatoes in the oven for 20 minutes at 350° F

3. In a medium sized pot, sweat garlic and onion on medium low heat

4. Add tomatoes, ketchup, vinegar, sugar, liquid smoke and salt

5. Cook for 15 minutes on medium heat

Tip: You can put the chicken back in the oven on broil for 5 minutes for dryer chicken or to give it more color
