Luscious Lima Bean Soup Recipe

You can follow a simple lima bean soup recipe when thinking of eating healthy.

The soup is quite rich and nutritious. Actually, Lima is a legume basically grown for its unique seed. It’s often eaten as a vegetable.

It’s equally known as butter bean. Just like other legumes, the seed is very rich in dietary fiber.

It equally contains insoluble fiber which helps in preventing constipation and irritable bowel syndrome.

The bean is very high in protein and free from fat. You can use it to prepare a nutritious soup by following the lima bean soup recipe outlined below:


Prep Time:  20 minutes

Cook Time: 2 hours 50 minutes

Yield: 14 servings


1 pound lima beans, dried

2 quarts water

2 ham hocks or 1 large meaty ham bone

5 carrots cut into pieces

5 celery ribs cut into pieces

2 tablespoons All-purpose flour

2 tablespoons butter

1 minced garlic clove

1 cup cold water

2 tablespoons salt

½ teaspoon pepper

1 can stewed tomatoes

Pinch paprika


.    Get the  beans in a Dutch oven

2.    Add water and bring to boil for 2 minutes

3.    Remove from heat, cover and allow to stand for 1 hour

4.    Drain and discard liquid, get the beans back to pan.

5.    Add 2 quarts of water and ham bone

6.    Bring to boil, reduce heat

7.    Cover and simmer for 1 hour

8.    Remove home from ham and cut into pieces

9.    Add carrots and celery

10. Cover and simmer until the beans become tender

11. Fry the garlic in butter in a small skillet. Stir in salt, flour, paprika and pepper.

12. Add cold water, bring to a boil, reduce heat, cook and stir for  2 minutes

13. Add tomatoes and simmer for 10 minutes until the sauce is properly heated.

14.Serve hot
