5 hard eggs, cooked

¾ mayonnaise (fat-free)

2 pounds small red potatoes, quartered

1 teaspoon ground mustard

1 teaspoon sugar

2 teaspoon cider vinegar

1 large chopped sweet onion

¼ teaspoon pepper

½ teaspoon salt

½ cup sweet red pepper, thinly cut

¼ cup fresh parsley, minced

2 chopped celery ribs

½ cup green onions, chopped



·       The amount of ingredients increases or decreases depending on the number of serving targeted.



1.    In a large saucepan, place the potatoes and cover with clean water

2.    Bring to a boil, reduce heat.

3.    Cover and simmer for 15 minutes or less. Keep simmering until the potatoes become tender.

4.    Drain and cool for 30 minutes.

5.    Break the eggs and discard the yolks, then cut the egg whites into tiny pieces (1 to 2 inches).

6.    Use a large bowl to combine mustard, sugar, vinegar, mayonnaise, pepper and salt.

7.    Add the egg whites, potatoes, onions, green onions, red pepper, parsley and celery.

8.    Toss to coat

9.    Cover  and refrigerate for 2 hours until the mixture is chilled.

10. Start serving
