Grilled Vegetable Recipe with Lemon and Herbs

Prep Time:  10 minutes

Cook Time: 35 minutes

Yield: 4 servings


4 yellow squash or zucchini

1 large eggplant

1 red pepper

1 peeled garlic clove

2/3 cup divided olive oil

½ cup fresh herbs, chopped

3 tablespoon fresh lemon juice

Fresh ground pepper and Sea salt to taste


·       The chopped fresh herbs can be thyme, basil, flat-leaf, parsley, marjoram, or any combination of the 5. 


·       You can still use baby eggplant instead of the large type


·       The amount of ingredient increases or decreases depending on the number of serving targeted.


1.    Cup the eggplant into slices (1/2 inch)

2.    If you’re using baby eggplant, cut it in half lengthwise

3.    Sprinkle eggplant with 1 teaspoon salt

4.    Allow to drain in a colander for 30 minutes

5.    Pat dry with paper towels

6.    Preheat grill to medium heat. You can heat to medium-high if you’re using a grill pan on stovetop.

7.    Cut yellow squash or zucchini  into slices (1/4 inch)

8.    Cut peppers in halt and have the stems/seeds removed.

9.    Grill peppers skin side down

10. Once the skins turn black and blisters, you have to put the peppers in a plastic or paper bag and then close it.

11. Allow peppers to cool, then slip off the skins with your gingers

12. Brush eggplant and zucchini with 1/3 olive oil

13. get the mixture grilled in batches for about 5 minutes on each side. Be sure not to burn the eggplant in the process. Just allow it to get cooked properly.

14.  Get vegetables arranged on a platter with peppers

15. Chop garlic with mortar and pestle. Get it mashed with ½ teaspoon of salt.

16. Place the mixture in a small bowl

17. Add lemon juice and then add the remaining 1/3 cup of olive oil

18. Drizzle vegetables with dressing and sprinkle the herbs

19. Add salt and pepper to taste

20. Cover the dish with a sheet of foil

21. Allow to cool before you start serving

22. Don’t refrigerate
