2 minced garlic cloves

2 cups chicken breast, cubed and cooked
1 cup brown rice cooked
¼ cup peas, fresh and frozen
4 green onions, sliced
2 tablespoons toasted slivered almonds
¼ cup pineapple juice
¼ cup soy sauce (low sodium)
1. Gently fry broccoli in oil for 3 minutes using a large nonstick skillet
2. Add onion and green pepper, then fry and stir for 5 minutes
3. Add ginger, pepper and garlic, fry and stir for 1 minute
4. Add chicken, green onions, peas, rice, soy sauce, rice and pineapple juice
5. Bring to a boil. Cook and stir until the veggies becomes tender
6. Sprinkle with almonds before serving.
