Soup Recipe

¼ cup cubed butter

1 cup onion, chopped

2 tablespoons tomato paste

3 pounds fresh tomatoes, chopped, seeded and peeled.

1 teaspoon salt

1 tablespoon sugar

½ teaspoon dried thyme

1 teaspoon dried basil

4 cups chicken broth

1 cup heavy whipping cream

¼ cup All-purpose flour

¼ teaspoon pepper


1. Fry onion with butter in a big sauce pan under medium heat. Allow it to become very tender, about 3 minutes.

2.    Add tomato paste, tomatoes, sugar, thyme, pepper and salt

3.    Simmer for 10 minutes. Make sure you stir the mixture occasionally

4.    Mix ¾ cup broth and flour. Use it to form a paste and stir into the tomato mixture gradually.

5.    Allow to boil and stir for 2 minutes until the mixture thickens

6.    Reduce heat, cover and simmer for 30 minutes until the tomatoes become tender.

7.    Remove from heat, Stir in the cream and begin serving at once.
