Appetizing Fish Stew Recipe

Yield: 4 servings

 

Ingredients:

1 pound fish fillet cut into 1 inch cubes

2 chopped leeks

1 clove garlic, chopped and crushed

1 large chopped onion

2 tablespoon butter or margarine

1 cup tomato, canned

1 green pepper, chopped

1 stalk celery, chopped

2 sliced carrots

1 cubed potato

Parsley, chopped

Salt, pepper, thyme and basil

 

Tips:

·       The fish fillets can be of any quality type such as trout, haddock, salmon, tilapia, whitefish and so on

·       The amount of ingredients increases or decreases depending on the number of serving targeted.

 

Directions:

1.    Melt butter or margarine in a large saucepan

2.    Add garlic, onion, celery, green pepper and leeks.

3.    Cook and stir until soft

4.    Add tomatoes, liquid and seasonings

5.    Add carrots and potato

6.    Cover and simmer until the vegetables become tender

7.    Add fish, cover and simmer for extra 5 to 10 minutes until the fish flakes easily with a fork.

8.    Re-arrange the seasonings.

9.    Garnish with parsley before serving.
