Tasty Fish Broth Recipe

Cook Time: 20 minutes

Yield: 3 servings

 

Ingredients:

1 halibut fillet, cut into pieces

2 chopped small shallots

¾ cup mixed vegetables, frozen

1 cup chicken broth

½ cup hash brown potatoes, frozen and cubed

1 can diced tomatoes with garlic, oregano and basil un-drained

1 small garlic clove, shredded

¼ teaspoon ground allspice

¼ teaspoon sugar

1 teaspoon seafood seasoning

2 bay leaves

Dash cayenne pepper

 

Tip:

·       The amount of ingredients increases or decreases depending on the number of serving targeted.

 

Directions:

1.    Coat a large saucepan with cooking spray and use it to gently fry garlic and shallot until tender.

2.    Add broth, mixed vegetables, tomatoes, seafood seasoning, hash brown, allspice, cayenne, bay leaves and sugar.

3.    Bring to a boil, reduce heat

4.    Simmer uncovered for 5 minutes until the vegetables become tender.

5.    Add halibut and simmer for 3 minutes or less till the fish turns opaque.

6.    Discard the bay leaves and then serve.
