Palatable Fish And Chips Recipe

Prep Time: 20 minutes

Cook Time: 25 minutes

Yield: 2 servings

 

Ingredients

½ lb haddock fillets

¼ teaspoon pepper

2 medium potatoes, peeled

1 tablespoon olive oil

1/3 cup cornflakes, crushed

1 tablespoon water

1 egg

1 teaspoon Parmesan cheese, grated

Tartar sauce (optional)

Dash cayenne pepper

 

Directions:

1.    Combine oil and 1/8 teaspoon  pepper in a large bowl

2.    Cu the potatoes into ½ inch strips lengthwise. Add to the oil mixture. Toss to coat.   

3.    Place the mixture on a baking sheet coated with cooking spray.

4.    Bake for 30 minutes or less at 4250. Keep baking until it turns crisp and golden brown.

5.    Use a shallow bowl to combine flour and the leftover pepper.

6.    Use another shallow bowl to beat egg and water

7.    Use another shallow bowl to combine cayenne, cornflakes and cheese

8.    Dredge the fillets in flour and dip in egg mixture. Coat with crumbs.

9.    Place on a baking sheet coated with cooking spray.

10. Bake for 15 minutes or less at 4250. Keep baking until the fish flakes easily with a fork.

11. Start serving with tartar sauce or chips as you desire.
