Ingredients:

1 big chopped onion

2 cans diced tomatoes, un-drained

2 tablespoon olive oil

4 pressed garlic cloves

2 large chopped carrots

1 medium chopped turnip

1 small chopped celery ribs

6 cups vegetable broth or chicken broth

¼ chopped head cabbage

2 cups green beans cut into pieces

2 small russet potatoes, chopped and peeled

½ teaspoon thyme

Salt and Pepper

Directions:

1.    Heat one tablespoon of olive oil in a large soup pot over medium heat

2.    Add onion and cook until the mixture becomes translucent

3.    Add garlic and fry for some minutes

4.    Add  the chopped vegetables and keep frying for

5.    Add extra tablespoon of olive oil  if there’s any need for that

6.    Add salt, pepper and thyme

7.    Put everything in the crock pot

8.    Add broth and tomatoes

9.    Cook for  4 hours

10. Mash the potato chunks against the side of the crock pot to make the soup thick.

11.Stir and star serving

 

Tips:

·      You can either use chicken broth or vegetable broth

·       The cooking hours vary depending on your crock pot. It can reach up to 6 or 9 hours

·      The amount of ingredients increases or decreases depending on the number of servings you’re targeting.
