Quick Cream of Tomato Soup Recipe

Prep Time:  5 minutes

Cook Time:  15 minutes

Yield: 3 servings


Ingredients:

¼ cup celery, diced

2 ½ cups tomatoes, diced and peeled

¼ cup onion, diced

2 tablespoon All-purpose flour

1 tablespoon canola oil

3 tablespoons sour cream

3 teaspoons fresh parsley, minced

1 cup evaporated milk

1 teaspoon salt

1/8 teaspoon pepper


Tips:

·       1 teaspoon salt is optional

·     To reduce tears while cutting onions freeze them for 20 minutes before chopping. Use a sharp knife for the chopping and chop very fast.

·       The amount of ingredients increases or decreases depending on the number of servings required.

Direction:

1. Combine celery, onion and tomatoes in a saucepan 

2.    Bring to a boil, reduce heat

3.    Cover and simmer for 15 minutes. Stir occasionally

4.    Allow to cool for 10 minutes, then pour into a blender

5.    Cover and process until the  mixture  becomes smooth

6.    Heat oil and stir in flour in a large saucepan

7.    Add milk gradually

8.    Bring to a boil, cook and stir for  2 minutes

9.    Stir in tomato mixture gradually

10. Add pepper and salt as you desire

11. Heath through

12. Serve with parsley and cream on top
