Chicken Curry Recipe -

Chicken Curry Stew

Total Time:  35 minutes

Prep time: 5 minutes

Cook time:  30 minutes

Yield:  4 servings


3 pounds cut up chicken

2 tablespoons marinade (see recipe below)

1 teaspoon olive oil

½ teaspoon salt

3 tablespoons curry powder

½ teaspoon cayenne pepper

¼ teaspoon red pepper flakes

½ cup chicken stock

½ cup water

1 teaspoon finely chopped fresh ginger

¼ cup strained tomatoes


1. Season the chicken with the salt and marinade and let stand in the refrigerator for an hour

2. Heat olive oil in a large pot and add the chicken

3. Brown the chicken on medium high heat being careful not to let it burn

4. Add the curry powder, cayenne pepper, chicken stock, water and ginger

5. Cover the pot and simmer for 25 minutes
6. Add the red pepper flakes and strained tomatoes and cook another 5 minutes uncovered

Blend the following ingredients to make the Marinade:

½ medium onion chopped

5 cloves fresh garlic

6 sprigs fresh thyme

3 sprigs Italian parsley

Juice of ½ a lemon

Sprinkle of salt

Drizzle of olive

Tip: The chicken is best if left to marinade overnight
