Simple Carrot Ginger Soup Recipe

The carrot ginger soup recipe is indeed very simple and unique. It’s quite easy to follow.

All you need is to have the recommended ingredients on ground.

You also need to follow the simple directions for the cooking process.

Carrot and ginger are two vegetables with awesome nutrients. Carrots contain fiber, protein and sugar in specific percentages.

Gingerroot is quite medicinal. It mainly promotes the production of bile.

However, it causes bloating, belching, nausea and heartburn when taken in its powdered form.

In any case, both vegetables can make good combination when used in preparing soup.

Here’s a simple guideline to follow.

 

Prep Time:  15 minutes

Cook Time: 20 minutes

Yield:  8 servings

Ingredients:

2   chopped onions, medium-sized

¼ cup butter

1 pound carrots, sliced and peeled

2 tablespoons fresh gingerroot grated and peeled

½ teaspoon salt

6 cups vegetable stock or chicken stock

½ teaspoon black pepper


Directions:


1.    Melt butter  in a 4-quart saucepan  over medium heat

2.    Add onions and fry   for about 5 minutes

3.    Add gingerroot and boil for extra 2 minutes

4.    Add  stock and carrot and continue heating

5.    Reduce heat to low, then cover and cook carrots  for 20 minutes until they become tender

6.    Add salt and pepper to taste

7.    Heat the sauce  over low heat until it becomes very hot

8.    Start serving hot into bowels

 

Tips:

·       If  the dish is meant for vegetarians, you have to use vegetable stock instead of chicken stock

·       The amount of ingredients increases or decreases depending on the number of servings.
