2 packages sliced dried beef
1 pound sliced and diced bacon
1 can sliced mushroom
1/8 teaspoon pepper
½ cup all-purpose flour
16 eggs
4 cups milk
¼ teaspoon salt
1 cup evaporated milk
¼ cup cubed butter
Tip: You can add chopped fresh parsley if desired.
1. Cook bacon in a large skillet until it gets crisp. Remove and allow it to drain on a paper towel
2. Add mushroom, beef, pepper in the same skillet
3. Cook until well mixed
4. Add milk, cook and stir until the mixture gets thick, then stir in bacon and set aside.
5. Whist eggs, salt and evaporated milk in a large bowl
6. Heat butter in another large skillet until it gets hot
7. Add egg mixture, cook and stir over medium heat. All the eggs to set well.
8. Place half of the eggs in greased baking dish, and then pour half the sauce over the eggs. Do this in layers
9. Cover and bake at 350 oF for about 55 – 65 minutes
10. Allow the dish to stand for 5 minutes before serving.
