Enjoyable Beet Salad Recipe

Prep Time:  15 minutes

Cook Time: 15 minutes + chilling

Yield: 9-12 servings

 

Ingredients:

2 packages lemon gelatin

1 can beets, julienned or diced

1 – 2 tablespoon horseradish

1 – 2 cups cold water

2 tablespoons chopped onion

¼ teaspoon salt

4 teaspoons white vinegar

1-2 cups celery, chopped

¼ teaspoon salt

¼ cup pimiento-stuffed olives, sliced

4 teaspoons white vinegar

Lettuce leaves

Mayonnaise

 

Tip:

·       The amount of ingredients increases or decreases depending on the number of serving targeted.

 

Directions:

1.    Get the beets drained. Reserve the liquid in a measuring cup.

2.    Add enough water and set the beets aside

3.    Place the beet juice in a large saucepan

4.    Bring to a boil

5.    Remove from heat and stir in gelatin until it dissolves

6.    Add cold water, vinegar, onion, horseradish and salt. Allow to chill

7.    Add olives, celery  and the reserved beets

8.    Pour into an 8 inch square dish. Allow to chill until firm for 3 hours

9.    Cut the salad into squares as desired. 

10. Serve on  plates lined with lettuce

11. Top with mayonnaise and olive
