4 bacon strips (Wright brand)

2 cups asparagus pieces

½ teaspoon fresh parsley, minced

1 tablespoon sugar

2 tablespoons white vinegar

1 small red onion, sliced into rings

1 medium chopped tomato

4 cups torn mixed salad greens

Salt to taste

 

Tip

Directions:

1.    Gently cook the asparagus pieces until they become crisp or tender

2.    Use a skillet to drain the asparagus

3.    Cook bacon over medium heat until crisp and then remove to paper towels

4.    Use the same skillet to fry onions lightly.

5.    Stir in the sugar, vinegar, salt and parsley. All the bacon to crumble

6.    Stir in the asparagus, tomato and bacon

7.    Pour the mixture over mixed green and then toss

8.    Start serving immediately.
